A simple technique to stop aubergines absorbing too much oil

Aubergines are really delicious but if you need to fry them in the pan they can turn in leeches that suck up oil!  You need to keep adding oil and even then it doesn’t seem like you have given them enough.  Now they are filled with oil they seem a little less appetising. However there is a really simple technique that you can do so that aubergines don’t soak in as much oil!  Read on to find out more abut this simple aubergine cooking technique! 

What you need:

  • Two eggs
  • Brush

The steps:

1) Wash, peel and cut your aubergine.

2) Separate the egg whites from you eggs and beat the whites together for a minute.

3) Dip your brush into the mixture and coat all the surfaces of the aubergine with a thin layer of the egg white.

4) Cook your aubergines together in a pan on a low heat with a little oil.
